
About Kat Harvey
Kat Harvey is both a cheese maker and cheese monger with 8+ years working in the Australian cheese industry.
Kat specialises in making soft cheese for Nimbin Valley Dairy while also operating a specialty cheese retail shop called Kat Harvey Cheese. Through the business Kat showcases the cheeses she has personally made alongside a finely curated selection of specialty cheeses from local artisans, other Australian and imported small batch producers.
Kat has learned the art (and science) of cheese making from some of Australia’s and France’s best cheese makers including Paul Wilson (Nimbin Valley Dairy), Ann-Marie Monda and Carla Meurs (Holy Goat) and Ivan Larcher (Long Paddock Cheese). She also has extensive experience in cheese retail working for many years at Formaggi Ocello, Surry Hills.
Prior to cheese making, Kat spent 23 years working as a chef in a number of Sydney’s top restaurants including Bistro Ortolan, Bloodwood and Astral.
